Overview

From the French petit meaning "small," the Petty knife is the equivalent of a Western paring knife and is ideal for peeling and slicing fruits and vegetables, making garnishes, and other detailed food-preparation tasks.

Master bladesmith Murray Carter devoted nearly two decades of his life to studying the skills and culture of traditional knifemaking in Japan. The designated heir to a 420-year-old family tradition, he holds the elite title of the 17th Generation Yoshimoto Bladesmith. He is also a Master Smith in the American Bladesmith Society and is recognized as one of the world’s leading experts on Japanese kitchen cutlery.

Through an unprecedented collaboration, Spyderco has faithfully translated the meticulous craftsmanship and attention to detail of Carter's exquisite handmade patterns to a breathtaking series of production knives known as the Murray Carter Collection.

Manufactured in Japan to Spyderco's exacting quality standards, the Murray Carter Collection includes Carter's highly refined expressions of five traditional Japanese kitchen knife patterns. Specifically chosen to excel at all types of food preparation, this formidable family of knives will ultimately be available in three different product tiers.

Literally meaning "in front of the cutting board," Itamae is an extremely prestigious title reserved for highly skilled sushi chefs. Consistent with that elite status, the Murray Carter Collection's Itamae Series —the highest tier in the Collection—proudly features premium materials and uncompromising craftsmanship.

The blades of Itamae Series knives are expertly crafted from laminated steel consisting of an Aogami Super Blue core clad between layers of SUS410 stainless steel. This classic three-layer construction allows the outer layers to protect and support the ultra-hard carbon-steel center layer that forms the blade's edge. Ground exceptionally thin and straight for unparalleled cutting performance, the blades also feature Murray Carter’s signature "Carter Elbow"—a distinctive taper from the spine to the point that reinforces the blade's tip.

The elite blades of the Itamae Series are paired with traditional "wa"-style (octagonal) handles made from stunning burl G10 and highlighted with black G10 ferrules.

Created for those who demand the very best, the Itamae Series faithfully captures the spirit of Murray Carter's coveted handmade knives and sets a new standard in high-performance kitchen cutlery.

About the Maker

Spyderco
Spyderco

Spyderco was founded in 1976 by Sal and Gail Glesser. Initially, the company focused on selling their first product the Tri-Angle Sharpmaker™, primarily at fairs and trade shows around the country. In 1981, the Glessers put down roots in Golden, Colorado and introduced the first Spyderco folding knife. That knife pioneered the concept of a round hole in the blade for one-handed opening, a clip on the handle for carry at the top of the pocket, and the option of a serrated edge for aggressive cutting performance. Those features revolutionized the knife industry and literally defined the form of the modern folding knife. Since then, Spyderco has steadily grown to become one of the leaders in the cutlery industry. In addition to a worldwide distribution network and manufacturing resources in the U.S., Japan, Taiwan, Italy, and China, our innovation has also earned us an impressive portfolio of patents, trademarks, and industry awards. More importantly, it has allowed us to earn the trust and loyalty of countless thousands of dedicated knife users around the world—an audience to whom we are extremely grateful.

Carter, Murray

Murray Carter is a 17th generation Yoshimoto bladesmith and ABS Master Bladesmith. Growing up in Eastern Canada, Murray enjoyed outdoor activities which gave him plenty of chances to use a diversity of blades. His disappointment with the blades he was exposed to gave him the desire to make something better. Shortly after graduating from high school, he traveled to Japan where his interest in blades led him to a Japanese bladesmith's shop. In no time at all, Murray was engaged in an apprenticeship under the tutelage of a 16th generation Yoshimoto bladesmith. Upon completing his apprenticeship, he was asked to take the position of number seventeen in the Sakemoto family tradition of Yoshimoto Bladesmithing. After eighteen years of bladesmithing in Japan, Murray and his family moved to Oregon. Murray has forged and completed over 25,000 knives, all of which were faithfully crafted using the traditional techniques from Japan.
