Goldenson Knives
My name is Aryeh Goldenson I have been a chef for the last 25+ years and making knives since 2017, I started selling them in 2020. I felt that based on my daily use of knives that I could bring something a bit different to the kitchen knife. To that end I designed a handle shape that draws from both Japanese, American and European influences. I utilize a chamfered bottom and butt (the Japanese). Round the top and chamfer the bolster (the European). Then use a coffin shape like a Bowie for the overall handle shape (the American). I use primarily AEB-L and Nitro-V steel for the superior rust resistance and get all my blades cryo treated for toughness.
